Chipotle Avocado-Kefir Sauce

 

Many people shy away from kefir because of its strong flavor. If this is you, or your family, you might want to consider incorporating it with other foods to create a kefir/other ingredient by-product. This neutralizes the strong flavor and allows you to serve up this healthy drink in a much wider variety of foods.


Milk kefir combines well with all sorts of things, especially rich ingredients like sour cream and avocado. It imparts tang and an almost cheesy flavor. Add smoky, spicy chipotle and the extra enzymes and probiotics will add a delicious boost to your savory snack food.


Ingredients:

  • 2 very ripe large avocados
  • 1/2 to 1 cup milk kefir, as needed to thin
  • 1/2 to 1 teaspoon sea salt
  • 2 teaspoons apple cider vinegar
  • 1/4 to 1/2 teaspoon ground chipotle powder (as spicy as you like it)


Instructions:

  1. Cut avocados in half vertically, and scoop out the soft flesh into a small bowl. Mash well with a fork. Add sea salt and vinegar and mix. Pour milk kefir in, starting with a half cup, until avocado-kefir mixture is as thin as you would like. Make it thinner for a salad dressing and thicker for a topping or dip.
  2. Add chipotle powder a little at a time, mixing as you go, until desired spiciness is reached.
  3. Serve over any savory dish, especially something fried.
