Tips for Buying Milk for Cheese Making: The more highly processed the milk (prior to cheesemaking), the more difficult it will be to make proper cheese curd. We always recommend using local milk that has not been treated for long transit time. Be sure to avoid Ultra-Pasteurized or Ultra-High-Temperature Pasteurized milk.

Thank you. - Yes, absolutely! You will want to make sure that any goat milk you purchase from the store is raw or regular pasteurized, but not ultra-pasteurized. Ultra-pasteurized milk will not work well for making cheese, so this is an important thing to keep an eye on.

- Can I used dry instant milk to make goat cheese?
- Dry instant milk is too highly processed for the cultures to use effectively. The only cheese kit that works okay with powdered milk is the mozzarella-and-ricotta kit, as those cheeses don’t require culturing.

My only experience with cheese making is mozzarella which is very simple- and cheddar which failed miserably.
How easy is goat cheese to make in comparison to mozzarella? - Fresh goat cheese is VERY simple...heat the milk, mix in the culture and wait. And don't worry if your cheese experiments don't go well at first. Even experienced cheese makers have failures from time to time. You just have to try again. :-)
