Blue Cheese Dressing

 

Blue cheese is one of those ubiquitous salad dressings that is either really good... or not. Those who love blue cheese dressing can attest to the fact that once you’ve had really good blue cheese dressing, you can’t eat the lower-quality bottled kind.

Most blue cheese dressing recipes you will come across contain a combination of cultured dairy and mayonnaise as the base. To that you add blue cheese, some acidity, salt, and pepper.

But in my version I replace the unstable vegetable oil-laden mayonnaise with additional cultured dairy. With the right ratio of acidity, blue cheese, and seasonings; you won’t even miss the mayo.

Instructions:

  1. Combine sour cream, heavy cream, buttermilk, salt, pepper, and vinegar in blender. Blend a few seconds, until smooth.
  2. Crumble in blue cheese and blend again.
  3. Allow to sit for several hours in refrigerator before serving.
