Originating in Mexico, water kefir grains (also known as Sugar Kefir Grains) allow for the fermentation of sugar water or juice to create a carbonated lacto-fermented beverage. Incredibly easy to brew, the starter culture can create a new batch of kefir every 24-48 hours. This makes a fantastic non-dairy alternative to milk kefir and can be flavored after brewing to make a variety of delicious sodas. If you are looking to replace soda pop, your family will love it!

Description: Kefir consists of lactic acid bacteria and yeast existing in a symbiotic relationship. The benefits are similar to those of milk kefir (aka dairy kefir) but the average person will be able to consume larger amounts of it due to it's water base.

Please note, kefir grains may or may not multiply due to a number of factors but they can be used repeatedly to create wonderful carbonated beverages.

Shipping Information: Water kefir grains are shipped as a starter culture in a dehydrated state in a barrier sealed packet and will need to be rehydrated prior to use. Please keep in a cool dry place until you are ready to make your first batch of kefir.

Each Packet of Water Kefir Starter Culture Contains: 2 teaspoons live active kefir grains in a dehydrated state (will rehydrate to 3-4 tablespoons of grains; sufficient to yield 2-3 quarts of kefir every 24-48 hours).

Water Kefir Recipes

Lemonade

  • 2 quarts Kefir
  • 1/2 cup Lemon Juice

Mix the kefir and juice together.  Chill and serve immediately or bottle the mixture in an air-tight container (such as a Grolsch-style bottle) for 24-72 hours (use caution when opening the bottle as the contents will be under pressure.


 

Cream Soda Kefir

  • 2 quarts Kefir
  • 1 - 3 tbsp Real Vanilla Extract

Mix the kefir and vanilla together.  Chill and serve.


 

Blueberry-Pomegranate Kefir

  • 1.75 quarts Kefir
  • 1 cup Blueberry-Pomegranate Juice

Mix the kefir and blueberry-pomegranate juice together.  Chill and serve immediately or bottle the mixture in an air tight container (such as a Grolsch-style bottle) for 24-72 hours (use caution when opening the bottle as the contents will be under pressure).


 

Cherry Kefir

  • 1.75 quarts Kefir
  • 1 cup Cherry Juice

Mix the kefir and cherry juice together.  Chill and serve immediately or bottle the mixture in an air tight container (such as a Grolsch-style bottle) for 24-72 hours (use caution when opening the bottle as the contents will be under pressure).


 

Apple Juice Kefir

  • 2 quarts Organic Apple Juice
  • 3 tbsp Water Kefir Grains

Add the water kefir grains to the apple juice, cover (a towel or paper coffee filter works well) and allow the mixture to ferment for 12-72 hours.  After the juice has fermented, remove the kefir grains.  Chill the kefir and serve immediately or bottle the mixture in an air tight container (such as a Grolsch-style bottle) for 24-72 hours (use caution when opening the bottle as the contents will be under pressure).

 

Please note, the amount of sugar contained in the juice is sufficient to yield a decent amount of alcohol so please use caution when consuming.  If making this drink for children, we strongly recommend only fermenting for 12-24 hours and using good parental judgment when determining if this is an appropriate beverage for your children.

 

Juice tends to be very hard on water kefir grains.  We recommend either waiting until your water kefir grains multiply (being cultured in sugar water) so you can split them into two sets or keeping a second set of water kefir grains just for using with juice.

I love water kefir! When my older grains died on me last summer, I figured it was time to get some new ones. These grains are very vivacious, and I can turn around 3 half gallons a week. My daughter can't get enough of it. We use dried figs because they have a high sugar content and make a wonderful drink

I have only made 1 batch of water kefir so far, but I have to admit I am already in love. I happened to have some leftover pineapple juice, so that is the flavor of kefir that I made. I also made a smoothie using the pineapple kefir, frozen strawberries and other fruit. It was DELICIOUS!

These are so easy to use, and the resulting beverage is delicious-- doing a second fermentation with lemons makes a tart, refreshing beverage. Add a handful of berries to the second fermentation, and you get a healthy probiotic substitute for berry soda.

This is going to sound un-original, but I love my water kefir grains! Several years ago I made dairy kefir for awhile and this was my first experience with water kefir. It's fun and easy to make probiotic beverages. I bought the starter kit and found it very handy. I actually use the muslin bag to hold fruit such as raisins and crystalized ginger, and let the kefir grains rest on the bottom of the jar, so I can easily fish out the fruit when it's done. I've done both single and double fermentations and have had great results with both.
